Apple Dumplings

Fall is here! This is my favorite time of year, and every year it is tradition to make delicious apple dumplings. I have not found someone yet that does not like these tasty treats! I found this recipe in a Betty Crocker cookbook, and have tweaked it a little to satisfy my personal taste. I doubled the recipe as shown in the below picture. Enjoy!



Ingredients:
  • 6 Jonathan apples (skinned and cored)
  • 3 Tbsp ground cinnamon
  • 2 cups plus 3 Tbsp brown sugar
  • 3 Tbsp chopped walnuts
  • 1 cup water
  • 1/2 stick softened butter (not melted)
Skin and core apples. Mix butter, chopped nuts, cinnamon, and 3 Tbsp brown sugar together in bowl. Spoon mixture into center of apple core. Roll out dough into a large square. Place apples onto dough one at a time. Cut dough to fit around the apple, and bring corners up around the apple (as if wrapping a present). Form dough around the apple, and place into a baking dish. Melt 2 cups brown sugar and 1 cup water on stove and bring to a boil. Pour mixture over apples in baking dish. Cook apples for 40 minutes at 425 degrees. After 20 minutes of cooking open oven and spoon brown sugar mixture over top of each apple. Continue cooking until done.


Recipe for dough:
  • 2 cups flour
  • 1 tsp salt
  • 2/3 cup plus 2 Tbsp shortening
  • 4 Tbsp cold water
Mix flour and salt. Add shortening and mix together with large spoon. Sprinkle water onto mixture and mix together until flour is moistened. Using your hands gather the dough together into 2 balls.
